I finally baked the World's Best Bread. I've seen it in many variations around the blog land - both baked in cast iron pot (4 L) and Römertopf. Now I do not eat so much bread that I would bake a giant bread, so I chose to make a slightly smaller portion of dough and then bake it in my little 2.4L Le Creuset pot. Was not it just a beautiful body? I'm finished buying expensive baking - because this has cost max 8 kr to do. As I said, so I decided to make a slightly smaller serving ( ) and fitted goodmans city it to my small saucepan. To get a little extra flavor to the bread I added a little Öland wheat. 400g plain flour 70g Öland wheat 375 ml water 1 teaspoon salt 5 g yeast (a piece the size of a pea) I will give the floor to Max from Kvalimad as here even shows how he makes his amazing bread: I touched my dough together in the bowl using a spatula - it took 20 seconds. There were movies and bowl stood on the kitchen counter overnight.

I enjoyed immediately a warm slice with BUTTER. Oh ... my ... God. It was also the perfect bread to serve my homemade chicken salad at lunch. I highly recommend you to bake this bread - it is SO easy. It is perfect for both bad days and fibro-hands. No kneading, minimal washing and utterly fantastic taste. Bread 600g tipo 00 flour or other flours with +11 g/100 g - alternatively Oland flour if you are willing to pay for the 4 cups water 12.5 g yeast (1/4 package) 3 teaspoons salt

Nice to see that you finally got started in the oven :-) I can recommend to extend the baking program with about 10-15min in order to get a slightly darker crust. This gives the good caramelization with extra flavor. Moreover, it's a really good idea to cut the bread's surface immediately before baking. This gives the bread a better opportunity to raise and it gives a more airy bread - just a few deep grooves with a sharp knife.

The long version: The last few months I have spent much of my parental leave to go with immersion in the noble art of baking good bread. My interest started some time ago with a Meyers baking class, but I have found much inspiration from Chad Robertson in the past (read about his book here: http://politiken.dk/mad/tema/ECE1622118/det-sublime-broed /).
Personally, I stopped baking with yeast and moved to leaven / biga (dear child has many names). It requires a little planning to get the fed up at the right time so you can use it while there is an optimal balance between acid and yeasts. First, so it makes the most delicious taste and partly so the bread rise up. However, it is all worth, since yeast has a tiresome taste. I'm not so fanatical that I do not use økogær in a pinch when there is a sudden need bread :-)

I am always looking for new arena for my food and pictures, especially stunning backdrops, so my small photo studio is now fully stocked up with old tables and worn plates. I recently got some new wallpapers for the collection, in particular a rustic slate and a nice, dark hill that I will have to advertise - is because they are super delicious and almost too good to use as a framework. The cute boys have also been kind enough to give me one of your brilliant bread, I'm going to give away to one of my readers.
